Fall Harvest Tomato Sauce

Ingredients

3 pounds fresh tomatoes

2 Tbl Olive Oil

2 carrots

1 medium onion

1 green pepper

1 medium squash or zucchini

4 cloves garlic

4-8 leaves fresh basil

1-2 fresh sprigs oregano

salt

pepper

Method

If desired, peel and seed tomatoes.

Chop all ingredients. Heat olive oil in stock pot. Add carrots, onion, green pepper and squash to pot. Saute for about 15 minutes until onions are translucent, stirring occasionally. Add garlic cloves. Stir for 30 seconds. Add tomatoes and stir. Continue cooking on medium low heat stirring occassionaly for 30 minutes. Remove from heat. Pass through a food mill for even consistency if desired. Or use an immersion blender to blend ingredients. Season to taste with salt, pepper and herbs. Evaluate thickness. If you desire a thicker sauce, pot and continue to cook on low until desired consitency is achieved.Or alternatively, add tomato paste to thicken the sauce.
